Florida's biggest party is back! Universal Orlando's Mardi Gras is going on now, and will run through April 4th. Where else can you get down to the authentic tunes of New Orleans, catch beads during the massive Mardi Gras parade and indulge in the tantalizing Cajun flavors of Bourbon Street?

This year, all of the food and drink items are available in tasting sizes. That means you can try more of the delicious dishes and tempting beverages. All of the new and returning favorites can be found daily at the French Quarter Courtyard in the New York area of Universal Studios Florida. They will begin serving food at 4 p.m. sharp, so bring your appetites.

New offerings at this year's event include a Crab Étouffée, made with rice and crab and smothered in a savory sauce. Another new one is the Gator Bites, which are real breaded gator meat, served with a zesty dipping sauce and freshly made potato chips. Three new dishes that are guaranteed to turn some heads this year are the Po Boys. Enjoy a Fried Catfish Po Boy with crisp slaw and just the right amount of hot sauce, or partake in the Shrimp and Andouille Sausage Po Boy, or the Chicken Po Boy.

Of course, it wouldn't be Mardi Gras without returning classics like gumbo, jambalaya, red beans and rice and everyone's favorite, the Twisted Tater on a stick. This year, the Twisted Tater is sporting a new Cajun seasoning twist! Don't fill up on all that, though, because you're going to need to save room for those soft, pillowy Beignets – or a slice of the Mardi Gras staple, King Cake, for dessert.

There are also several new signature drinks to sample along with all the incredible dishes. This year's mixed drinks include Carnival Cocktail, Ragin’ Rumbalaya, and the Vicious Voodoo – a combo of the other two served in a special double-sided cup! New for 2019 is the Mimosa Bar, serving up unique flavored mimosas like Caramel Apple, Raspberry Rosemary and Mojito Mint. For a non-alcoholic option, try the Bayou Bog Water – a lemonade and ginger ale mix filled with gummy worms and fish, and topped with blueberry boba.
